On New Year's Eve me and my friends had a little meal to start the evening off; after realising that 95% of the guests had provided Doritos I was eagerly awaiting the unveiling of the main dish and almost peed myself with excitement when Charis revealed a tray succulent chicken breasts stuffed with pesto and wrapped in Parma ham. I had never thought of stuffing chicken before, and so I was super excited to try out the recipe for myself.
One of my New Year's resolutions is to eat healthier (the same as last year's, and the year before's...). This chicken is great for anyone who is trying to eat healthier as it is a tasty and easy alternative to plain chicken, and is interesting enough to just be served with salad, making for a nice light evening meal.
You will need: Chicken breasts (1 per person) // Parma ham (2 slices per person) // Sundried tomatoes // Pesto // Olive Oil
Preheat the oven to 200 degrees. Using a sharp knife, cut a slit in each chicken breast. You might need to dig your thumbs in it to open it up a bit.
Take a spoonful or two of pesto and spread it in each slit.
Insert some finely chopped sundried tomatoes too, don;t worry if it gets a bit messy!
Wrap two pieces of Parma ham around each breast, ensuring that the slit is fully covered. Drizzle with a little olive oil, place on an oven tray and bake for 25 minutes.
Once cooked they should look like this (slice one open with a knife to check it's white all the way through!)
I decided to serve mine with a big helping of salad but you could serve them with mash and veg, or chips!
