Recipe: No Bake Cookies

Lately I've found myself wanting to bake all. the. time.
 There's something about the sun coming out that makes me want to whip up cupcakes and cookies and pavlovas and pies! 
Today, I decided to try out a new recipe; the "No Bake Cookies". Peanut butter and chocolate is one of my all time favourite flavour combinations, and so I was drawn in by the beautiful idea of a quick and easy recipe that results in a whole batch of peanut butter and chocolate flavoured cookies. (Also, oats being the main ingredient means they're a tad healthier than regular cookies, rejoice!)
The process of making the cookies only takes about ten minutes, although they do have to be left in the fridge to cool which can take up to two and a half hours. They're a great option if you need a sugar hit fast, or if you're not quite up to Great British Bake Off standards!

Pesto-Stuffed Chicken

 On New Year's Eve me and my friends had a little meal to start the evening off; after realising that 95% of the guests had provided Doritos I was eagerly awaiting the unveiling of the main dish and almost peed myself with excitement when Charis revealed a tray succulent chicken breasts stuffed with pesto and wrapped in Parma ham. I had never thought of stuffing chicken before, and so I was super excited to try out the recipe for myself.
One of my New Year's resolutions is to eat healthier (the same as last year's, and the year before's...). This chicken is great for anyone who is trying to eat healthier as it is a tasty and easy alternative to plain chicken, and is interesting enough to just be served with salad, making for a nice light evening meal. 

You will need: Chicken breasts (1 per person) // Parma ham (2 slices per person) // Sundried tomatoes // Pesto // Olive Oil

Chicken and Bacon Salad

I'm not usually one for salads; they're boring, and eating them makes me feel like a rabbit. However, this recipe is a delicious blend of salad, vegetables and meat and perfect for lunch on a summer's day. I put this recipe together by accident one afternoon whilst trying to make use of all the leftovers in the fridge and have been obsessed with it ever since. Not being the most adventurous of eaters, I stuck to the basic salad essentials but you could easily add some more exotic ingredients such as carrots, or those caper things. Anyhow, I felt the need to share it and if you try it out, let me know!

KJ's Double-Chocolate-Cookie-Dough-Brownie Bites

Warning: This recipe is not for the feint-hearted (because it may severely clog up your arteries)

Today I wanted to share my new favourite recipe with you; it's a big tray of buttery sugary gooey chocolatey  yumminess!
 Have you ever baked cookies and rolled them up in to neat little dough-balls and then watched them merge in to one giant super-cookie in the oven? Well, in an effort to avoid such an eventuality, I decided to follow this cookie recipe and then fill up a baking tray with the mixture, and cut it in to little cookie-squares at the end. However, this produced something much thicker than cookies, much gooier than brownies and much yummier than anything I've ever eaten before!

I hope you enjoy baking these quick and easy treats, and the food coma that you will inevitably endure afterwards.

You will need: 
200g unsalted butter | 300g caster sugar | 1 egg | 275g self-raising flour | 75g cocoa powder | 2 big bars of chocolate | A splash of milk
Note: I used 1.5 times these ingredients as I was baking them for about 20 people.
